Delicious Marinated Grilled Lamb Chops Recipe

Serves 4. Prep 10 mins. Marinating time 2 hours. Cooking time 12 mins.

Ingredients

Lamb chops

12 lamb chops
3 tbsp olive oil
1 tbsp fresh rosemary
2 tsp fresh chopped garlic
Salt and freshly ground pepper

Red wine jus

½ bottle good-quality dry red wine
3 black peppercorns
2 bay leaves
4 sprigs fresh thyme
2 cups demi-glace
Salt and freshly ground black pepper
Fleur de sel to garnish

Method

Season the lamb chops well with salt and pepper. In a large bowl, stir together the olive oil, rosemary and garlic. Add the lamb chops, turning to coat. Cover and refrigerate for at least 2 hours, or up to 24 hours.

Once marinated, bring the chops to room temperature. Grill or broil to the doneness you like: about 6 minutes for rare, 7 minutes for medium-rare, turning so they brown well on all sides.

Meanwhile, in a saucepan combine wine, peppercorns, bay leaves and thyme and bring to a low simmer. Cook until reduced to one-quarter of the original volume. Add demi-glace, bring to the boil and season to taste.

Grill the chops over high heat, 2 minutes per side for medium-rare. Rest on a warm plate, then arrange on a platter, drizzle with red wine jus and finish with fleur de sel.
